Traditional Portuguese Recipes: Codfish Cakes

Ingredients

  • 250 gr Soaked codfish
  • 200 gr Potatoes
  • ½ Onion
  • 1 tablespoon of chopped parsley
  • 4 Eggs
  • Salt
  • Pepper
  • Nutmeg
  • 2 L Vegetable Oil

Preparation

Boil the unpeeled potatoes, peel and puree them.

Boil the codfish and drain. Remove the fish bones and rub it well in a clean and thick cloth until it is completely torn and shredded. 

In a bowl, add the mashed potatoes, the codfish, the onion and the finely chopped parsley.

Season with salt, pepper and nutmeg. Incorporate the eggs, one by one, mixing the dough until it reaches an ideal consistency.

Shape the cakes using two tablespoons and fry them in abundant and very hot vegetable oil.
